Where are grease traps required in a kitchen?

A grease trap is typically required for pot sink and pre-rinse/scrap sink in the soiled dishtable. Floor troughs should be piped to grease traps since they often collect greasy liquids. Some codes also required that floor sinks in greasy areas also be piped to floor sinks. Often layouts require multiple grease traps to cover all of the areas and equipment.
