Located in the center of the academic core it was facing spikes in volume between classes. Several renovations had occurred to increase capacity including the addition of service points but the queues still stretched out the door At the same time a number of ethnic for-profit operations were opening in the off-campus community about 3 blocks away. “All you can eat” food bars and $ 5 full meal deals were drawing customers away from Trillium and impacting its profitability. The facility was tired, tolerated by some but hated by many, and losing money. Further, there was not enough seating to accommodate peak period lunch demand so any solution that increased business would also need to add more seating. |
