Over the years Clevenger Frable LaVallee, Inc. has planned and designed several successful Commissaries/Central Kitchens supporting high volume needs of gourmet food stores, restaurants, colleges & universities, community services, airline and off- premise catering. Our roots in central kitchen design are traced to Jim LaVallee’s operating experience at Michigan State University where he oversaw the Central Bakery and Food Processing Center which supported 18,000 students living in residence. Our most recent commissary project for Dean & DeLuca represents state of the art production facilities to take advantage of economies of scale and deliver bottom line financial results.
