
Situation Analysis:We had a call from a developer/ building owner that we had worked with on earlier projects. He had a prospective tenant interested in leasing space in his building. He wanted to have a third party confirm the capacity of the existing cafeteria facility in that building. The prospective tenant didn’t want his work force to lose productive time to service delays in the cafeteria.
Challenge: Assess and define the service capacity of the cafeteria dining facility. Strategy Our Client forwarded a copy of the existing conditions plan of the cafeteria facility for our review. We reviewed the plan by phone w/ our Client. We confirmed the points of service and how the existing facility was being used/operated. Relying on industry standards and established cafeteria planning guidelines we estimated the service capacity of the facility.
Results: Since time was of the essence, we prepared a memo to our Client the same day that we received the existing conditions plan. The memo outlined the capacity of the facility in terms of: - Customers to be accommodated at peak hour.
- Customers served over the entire lunch period.
- Cashiering capacity.
- Seating capacity.
- Overall service capacity.
- Total building population.
